Warm the olive oil in a frying pan and toss the spring onions and mushrooms until softened. Stir in the minced steak and add the seasoning. Fry the until the mince is brown (constantly stirring) then break in the eggs and mix them up quickly with the mince and keep on the heat for a couple of minutes or until the eggs are cooked.
Delicious, nutritious & filling served alongside some cherry tomatoes and sliced cucumber or even half an avocado.
