Coconut Milk

Pierce two holes in the coconut and drain the water into a jug.

Hold the coconut and strike with the blunt edge of a large kitchen knife until the coconut fractures and can be broken into halves. With a small kitchen knife, make incisions all around the inside of each half to enable you to lever out the coconut flesh. Peel the remaining husk away to leave just the white coconut flesh.

Poor coconut water and flesh into a food processor. Add cold water (twice as much as you have coconut water) and blend to a fine consistency (takes about three minutes). Filter the liquid through a gauze (or you can use a tea towel). Wring the gauze and squeeze as much juice out of it as you can.

You will also be left with desiccated coconut in the gauze.
