Baked Sweet Potato

How To Make It:

Heat the oven to 180 C. Wash and peel the sweet potato then slice into 1.5-2cm discs. Place in a baking tray with all the other ingredients and ensure that the sweet potato slices are evenly coated with them. Bake in the oven for 20-25 minutes, turning them over half way through. They are perfect for keeping the glycogen levels topped up after a hard training session or before an endurance event.

Serving Suggestions:

For a bit of variety and colour, try including peeled and quartered beetroot and parsnips with the sweet potato.
