Chilli, Garlic and Basil Chicken

How To Make It:

Pre-heat the oven to 200c. Finely chop the basil, garlic and chilli and add it to the oil and salt in an oven-proof pot with a lid. Add the chicken thighs and mix thoroughly so that each portion is coated with the seasoning.

Bake for 10 minutes, then reduce the oven temperature to 150c and bake for a further 30 - 35 minutes, until cooked through. You may wish to remove the pot lid for the last 5 minutes to brown the chicken portions.

Serving Suggestions:

I like to eat this with roast parsnip wedges and steamed kale.
