Courgettes Nicoise

How To Make It:

Fry onions and garlic in olive oil in a large pan. Add in the chopped tomatoes, and the seasoning. Stir occasionally until it turns into a creamy mixture. Add the courgettes and gently stir in to ensure they are all covered with the tomato sauce. Cook for 5-10 minutes or until they are cooked to your taste (we like them a little crunchy).

Serving Suggestions:

For a special occasion try using a Spirali and making spiral of courgettes which will look exciting served alongside some steak or slow cooked pork.

Notes:

An easy way to peal tomatoes is to put them in a glass bowl and cover them with boiling water, leaving them in for a minute. The skin will peal off very easily also making sure you are only pealing the skin and not wasting any of the tomatoes.
