Robert's Catch (Salmon in Pancetta)

How To Make It:

Cut the fish lengthways along the middle and spread some olive oil on the inside of each fillet. Mix the rinds and chopped rosemary together and divide into four. Spread on the inside of one half of each fillet. Put the fillet halves back together and gently wrap with pancetta, wrapping all the way around each stuffed fillet.

In a frying pan, heat up some olive oil and fry each fillet for a few minutes on each side, until the pancetta is holding the fillet halves together. Place on a baking tray and bake in the oven at 150c for 10 - 15 minutes.

Serving Suggestions:

We enjoyed these with roast squash and beetroot, and some steamed greens.
