How To Make It:

Mash the banana until smooth, then mix in the almond butter. Break in the egg(s) and beat into a mixture. Add the cinnamon (if required).

Pre-heat the grill on a high heat. Put the coconut oil into into a frying pan and heat on a high heat. Add the mixture and turn down to a low heat immediately. Cook for 1 - 2 minutes until small bubbles begin to appear on the surface, then put the frying pan under the grill (these pancakes are not easy to turn over, so the grill is an easy way to brown the top).

Serving Suggestions:

These pancakes are great with blueberries, either whole or pureed as a filling.

Notes:

If you do not want to use a grill, split the mixture into small pancakes which you will be able to turn using a spatula.
