Rub the lamb with all the other ingredients until evenly coated all around. For best results leave for at least an hour (and up to 24 hours) before cooking but this is not essential.
Heat the oven to 180°C.
Cook for 40 minutes in an ovenproof pot with a lid. This will ensure the lamb remains juicy and succulent. Remove the lid for the last 5 minutes to allow the lamb to brown.
Really nice accompanied with roasted mediterranean vegetables.
