Warm the oven to its maximum temperature. Ensure all ingredients are covered with seasoning. Place in an oven dish with a lid (preferrably clay). To ensure the lamb is completely sealed you may want to place a layer of foil over the dish before putting the lid on. Put in the really hot oven for 30 mins then turn it really low (I turn it down to 100 degrees centigrate). Leave it to cook for a minimum of 4 hours. The longer it cooks at slow heat in its own juice the tastier this dish will be.
Serve with your favourite vegetables/salad.
