Dark Chocolate and Coconut Bounty Bons

How To Make It:

Melt the chocolate (I use a porringer for this). In the meanwhile mix all the other ingredients in a bowl (I use the remaining fresh coconut after making coconut milk) using a little warm water to melt the coconut oil (and honey if you are using set honey).

Poor the chocolate in to a deep silicone chocolate mould ensuring that each mould is thoroughly covered in chocolate. Poor the chocolate back into the pan and stick the chocolate covered mould tray in the fridge for about 10 minutes or until set. Take out of the fridge and gently fill with the coconut mixture ensuring that the coconut mixture is compact. Cover with the remaining melted chocolate. Place in the freezer for a couple of hours to ensure the bounty bons are firm and ready to be removed from the mould. Remove from the freezer and gently coax the bounty bons out of the tray.

Enjoy as a snack or treat after a hard training session, share with loved ones or serve as a little surprise after dinner either on their own or even accompanied by some coconut ice cream...
