Red Spicy Pork

Ingredients (serves 4):

How To Make It:

Using a large pan fry the onions and garlic in coconut oil with all the spices and seasoning (apart from the bay leaves) over a medium heat (keep stirring as the spices will form a thick paste and may start to stick to the bottom of the pan).

Add the diced pork and stir until it is thoroughly mixed with the onions and spices. After 5 minutes, stir in the chopped tomatoes and let it cook for 5-10 minutes before adding in the mushrooms and the bayleaves.

Put the lid on and let it cook slowly over a low to medium heat for at least 1 hour.

Serving Suggestions:

Monkey and I enjoy this dish over some cauliflower mash with some steamed spinach on the side.
